Remember Popeye the Sailor Man?

I think most people remember where he got his strength from.  SPINACH.  It is unfortunate that these cartoons and comic strips don’t permeate our culture much anymore.  We used to have characters like Popeye advocating healthy food, honesty, and good deeds.  I wonder what happened.

Anyway, Spinach is one of the best leafy green vegetables in my opinion.  It is generally soft and fluffy.  It can be eaten raw as long as you have no thyroid issues.  Otherwise, lightly sautéing or steaming are other good options.  I don’t even know where to start with the nutrition profile in organic spinach.

Of most importance, I would place high levels of magnesium, vitamin k, vitamin A, manganese, folate, and vitamin C at the top of the list.

This is one of the few leafy green vegetables I would advise eating raw.  Things like kale and collard greens are generally hard for humans to digest in their raw state unless juiced or blended.

So let’s load up on the spinach guys.  It goes with just about any vegetable medley or meat dish.  Also goes good with eggs.
